You made Avocado….WHAT?!?!

So last weekend i bought a giant bunch of beautiful beets at the farmers market. i came home, admired them, then i realized i had NEVER made anything EVER using beets. I was beside myself. I know that my parents used to make pickled beets, and picked eggs, and just plain boiled beets, but none of these options appealed to me. Finally last night I remembered that a friend of mine raved about her beet curry, and how even her kiddos loved it. I figured it was worth a shot. Let me just say this is not a recipe for those who like an easy in and out sort of recipe (like me!) between the peeling, grating, peeling (onions this time) and chopping (tomatoes) and the dirty dishes and beet juice that just seemed to get all over everything, I was in the kitchen all night. Anyway, the point of sharing this is that I got the genius idea to reserve some of that lovely beet purply-red color and I will be using it to naturally dye some Easter eggs! Once I find out more info, I may even save it for food coloring throughout the year. I’m curious if freezing would be a good method of preserving it, as I don’t do much food coloring normally. I know that I will use some for Easter eggs, some I will use as a natural dye for babies homemade finger paint, but I’m sure I will have some left over even after that. Hopefully I can update you soon on this endeavor.

Anyway, the purpose of today’s blog is to share with you a new yummy recipe that I found on Pinterest and have been hesitant to try. Avocado Brownies. This is not a new concept, I have seen avocado sweet potato brownie recipes several times and various versions of avocado brownies, but I really liked the “layout” of this one, as it was closely related to a regular brownie recipe and I wouldn’t have to veer that far out of my comfort zone. This is the recipe I found on Pinterest originally, but my modifications were as follows: I wasn’t totally comfortable with a whole cup of sugar, so I used 1/2 cup sugar and 1/2 cup stevia for baking. I also didn’t have avocado oil so I used 2 tbsp. almond oil and 1 tbsp coconut oil. It turned out VERY nicely. I also didn’t use the icing. I just wanted a nice plain brownie that I really felt I could fool people (including myself) with. If I could have done anything different, it would have been to more thoroughly mash the avocado in step 1. I get the occasional speck of green every now and then, which I don’t mind, but it takes away from the illusion, so if you are giving them to particularly persnickety kids or husbands, they may only buy until the first green sighting. Anyway, pictures! You’ll have to forgive me, as we had already dipped in before I thought to take any, and it was dark out, so I didn’t even have good lighting. But alas, I share with you the ooey gooey chocolatey yumminess.:)


Don’t you just love our zig-zaggy cuts? Lol. Clearly convention was just tossed out the window with this one.
Oh! I almost forgot, these would be GREAT fun for St. Patrick’s day! And the green chunks would probably even be acceptable by the family. 🙂

A home remedy, a recipe and a cleaner

So earlier in the week I started feeling rather yucky, sinuses, sore throat, headache, body ache, etc. it was more than just allergies, but not enough to be diagnosed as a cold either. I’m not one to pop a bunch of pills, so I made up a very nice “tea” that I drank probably 3-4 times a day for two days, and here I am on day four, almost 100% better. My tea is far from spectacular, but since it helped, I wanted to share.

1 cup boiling water
1 1/2 tbsp. local honey (organic and raw are bonus options, but local is a must)
1 tsp. cinnamon
1-2 tsp. Black pepper (I’m guesstimating, as I just gave a few good shakes of the pepper shaker.)

Two lemon slices, or about 1 tbsp. Lemon juice
2-4 drops of clove oil (it’s an essential oil with many great properties and uses, one of which, is for numbing– goodbye sore throat!)

Mix everything together in a mug/teacup and drink while warm, or as hot as you can manage it without scalding yourself.

That’s it! 🙂

I will also say that I had a ridiculous craving for boiled cabbage. Upon review, I discovered that cabbage is loaded with vitamin C! Even more so than oranges. Funny how the body gets you to give it what it needs, isn’t it?

Now for the toddler recipe- I have several that I will share, but this is one of my favorites. Mostly because of the shock value, but also because I love making really yummy things that are actually good for you, and thereby good for your wee ones as well. I really enjoy this recipe because I actually tricked a friend into eating it once. Her reaction when I told her what it was, “that’s disgusting! …….But it’s good”…..ahhh, success! I first came across the recipe here
I’ve tweaked it a little, but by all means, I want to give credit to the awesome edible harmony site!

Beneficial Chocolate Pudding/icing

1 avocado, halved, pitted and scooped
2 1/2 tbsp cocoa powder
4 dates
1 tbsp. honey
2 tsp vanilla
Dash of salt
If you want to use it as frosting, add 1 tbsp coconut oil

Toss everything into a food processor or blender and pulse until mixed well, then let it mix on high about 2 minutes. You want to make sure the dates are thoroughly pulverized. Store leftovers covered in the refrigerator. You can also freeze and make yummy pudding pops, but make them small, since they melt kind of fast.

Time for a revamp

So I feel, after some “friend pressure”, that I should add another category of topics to my blog (not that I have much here, but I digress). Healthy baby food options. I am the proud mum to a 1 yr old slightly tomboyish little girl who, like her beloved mum (that’s me!) enjoys food. And not always the healthiest ones. What a dull world it would be if we all just absolutely adored Brussels sprouts, am I right? (I would like to interject here by saying that I do in fact love Brussels sprouts, I mean- they’re miniature cabbages! Anything in “mini” form is okay by me. Much preferred actually) Any-whoo, I, like many moms, do not like to feel that we are depriving our children of those yummy delicious treats that our non-health based friends kids are enjoying! Oh how I hate the judgmental glances and poorly hidden insults by some people! Yes, my child is a year old and has NOT had a doughnut, or hole of said doughnut, a cheeseburger, nuggets of any sort, cake from a grocery store or bakery, etc., etc., ad nauseum. Therefore, I will be featuring a health-based foodie recipe for the munchkins in our lives on a regular basis, as well as provide information regarding children’s health in general. I’m not going to turn into strictly child based though! I’m FAR too “something shiney!” for that kind of nonsense. This just adds something to the mix!
